The Kahlua and ice cream was for a shake... and I think I'll try french vanilla cake with the french vanilla Kahlua for my next attempt.
I made infused orange rum coconut. The Kahlua was just there ;)
There's the cake with infused orange rum coconut and pineapple cake.. very moist.. Too moist in fact when it comes to using it for cupcake bites...
Since I made the decision last minute that a rum frosting would be over the top I chose to go with plain ol chocolate frosting- the one frosting I did not have. I refused to go to the store, so I made a dark chocolate frosting...
This is as in progress as you get. Halfway done- just need to dip the tops and garnish...

And now comes the honesty. Another post that attributes to the title of my blog. I am not impressed. I wanted to throw them all away, but couldn't bear to waste all that alcohol. Ok or the other ingredients either. There are starving people everywhere you know. :) The batter was runny when I poured it in the cake pan so I knew from the get go it was going to be interesting.
My chocolate frosting was also runny, but I was over it so went with it anyway. Unhappy with the texture, I added some cream cheese frosting to the mix too. Yeah- these bad boys are pretty healthy I tell ya. So that last picture up there, are the ones I ended up throwing away.
I will attempt to make alcohol infused bites again I suppose, but will opt for the easier route of box cakes- replacing the water or oil with alcohol maybe. Or maybe I will just continue on with the others on my repertoire.

There is a book on amazon called Booze Cakes - I actually almost got it and then my Joy the Baker blogger actually bought it and posted a recipe. I feel this may be right up your alley! One can never have too much booze infused goodness to get through the day!
